Shopping List:
bunch of bananas(6)
butter
brown sugar
grated spice - nutmeg, allspice or cinnamon--or a little of each
3 limes (could use 3 lemons or 2 oranges instead)
Rum-dark is best (4 small airline type bottles, if you don't want to lug the whole bottle)
Ingredients:
6 large ripe bananas, in a bunch
4 tbsp butter
1/2 cup brown sugar
1/2 tsp grated nutmeg
3 limes, halved
1/4 cup rum
Directions:
Set the unpeeled bananas in hot coals, in a bunch.
Bake until peel is black and soft to the touch.
While waiting for them to blacken, in a skillet, heat butter with brown sugar and the spice until it bubbles.
Slit bananas open, put in dishes and squeeze lime/lemon on them
Drizzle the butter-sugar mixture on top of that
Heat rum in small pan. Ignite rum and very carefully pour flaming mixture over the bananas, a little at a time, shaking the skillet/pan gently until the flame dies.
