Creole Blackened Fish

Feeds 4-6

Mix these spices together at home and put in baggie to carry to camp:
2 T Paprika
2 T Cayenne pepper
2 T pepper-white is best but black's fine
3/4 c Creole seasoning
1/4 c Blackening seasoning

While in camp with nothing to do, catch 4-12 fish in the afternoon and fillet them, or catch in the local fish market all filleted and cart with you.
 
After they are filleted, coat them with the spice mixture from home.
Then
Melt the 2-4T butter or margarine in an iron skillet over a hot campfire.
Sear the fish for 1 to 2 minutes on each side (depending on the size of those 'whoppers' you caught) or until they smoke and appear 'blackened'.

Remove the skillet from the fire and cover. The heat in the pan will complete the cooking in about 10 minutes.
That's about enough time to settle back with  'a nice cold-one.'
